When I am creating a book or matching board, how do I replace an image above the text without losing the text as well? For example, when making a book, I choose image and text for one tile and as I go along I realize I want a different picture for that page. If I just drop the image into the blank previous tile or to replace the previously chosen image, then I lose the text I've already written.

I know exactly what you are talking about--and it bothers the heck out of me too! You probably have noticed that it doesn’t happen every single time (seems like it only happens to me when it is fabulously well-crafted text that I have painstakingly perfected...)
This has to be the cockroach of “known issues” -- we’ve stomped the bug any number of times, and marked the issue “fixed”... only to find it skittering around again (and making very RUDE gestures with its antennae...).
Luckily, there is a pretty simple work around while we search for a permanent pesticide.
To be on the safe side, when you are editing a tile by adding a new image (especially an import), first copy the text. Click on the text to highlight it (the whole thing will highlight in blue on your first click, showing that it is all selected) then right-click the mouse and select Copy.
That way, if the new image replaces the text when you drag it in, you can click on the new text, right-click again and select Paste to return the text back to the original.
